A salad doesn't have to be chopped iceberg lettuce, tomatoes and cucumber. There are so many different, exciting variations and with summer on its way (hopefully!), I'm really enjoying finding new recipes and making up my own creations.
Like this pomegranate and mozzarella salad I have just discovered. It's delicious, refreshing and it's also incredibly quick. Great for the impatient cook like me.
Mozzarella cheese is a solid source of protein and fat to include in your diet. It can be a smarter choice than soft cheeses such as brie and rich hard cheese such as cheddar because it tends to contain fewer calories and less saturated fat.
A handful of seeds from a pomegranate
1 ball of mozzarella
For the dressing:
1/2 tbsp roughly chopped flat-leaf parsley
1/2 tbsp roughly chopped mint
1/2 garlic clove, finely chopped
1/2 red chilli, deseeded and finely chopped
2 tbsp extra virgin olive oil
A pinch of ground cumin
Remove the seeds from the pomegranate. Drain the mozzarella balls and tear into smallish pieces and arrange on two plates. Blend together the dressing ingredients with a fork. Drizzle the dressing over the mozzarella then sprinkle with the pomegranate seeds. And that's it! Enjoy!
