Rhubarb Vodka Jellies


I thought I'd quickly post the recipe for these rhubarb vodka jellies that I made for my Eurovision party - they were so delicious.

Beware though...the alcohol in them doesn't taste strong and they are so good that you could easily plough through a few before ending up with a very sore head the next morning!

For 8 jelly shots, you will need:
500g rhubarb
400ml water
100g caster sugar 
4 sheets gelatine
4 tbsp vodka
1 tbsp Cointreau

Chop the ends of the rhubarb and cut into pieces so it will all fit in a saucepan. Cover with the water and sugar and poach for about 5-10 minutes until soft. Strain the liquid into a jug, keeping some of the rhubarb back for decoration later.

Soak the gelatine in cold water for about a minute then squeeze off the excess water and stir into the rhubarb liquid until dissolved. Stir in the vodka and Cointreau.

Transfer to shot glasses and leave in the fridge to set - this takes a couple of hours. Finish with a small slice of the leftover rhubarb and enjoy!

  3. Last time I had homemade vodka jelly I regretted it the next day... yours do look yummy though!
